If you don’t know what to prepare for dinner or lunch, here’s a very easy idea! Instead of the usual toast, why not try zucchini toast? They are delicious, easy to prepare, and can be filled with whatever you like. I used sliced scamorza cheese and vegan deli slices. You will need large zucchinis and little else to make everyone happy. If you like the idea of using vegetables differently, try the zucchini roll with pizzaiola, or the eggplant sandwich. Also try the potato flatbread with radicchio or the fennel cordon bleu.

- 3 zucchinis (large)
- 2.8 oz vegan deli slices
- 2.8 oz cheese slices
- to taste salt and pepper
- to taste extra virgin olive oil
- 1 tsp dried rosemary
- 2 tbsp breadcrumbs

Steps for Preparing Zucchini Toast
Take large zucchinis; if they are small, you will obviously need more. Slice them lengthwise into not too thin slices; we need them a bit meaty.
Brush a baking tray lined with parchment paper with oil and sprinkle with breadcrumbs. Arrange the zucchini slices next to each other, slightly overlapping because they will shrink when cooked. Season with salt, pepper, oil, breadcrumbs, and rosemary (or your preferred herb). Bake in a fan-assisted oven at 392 °F for about 20 minutes until they become golden.
On half of the slices, place vegan deli slices and cheese, and flip the remaining slices on top to close. Bake again for 5 minutes, just enough time for the cheese to melt. Cut into rectangles and serve.

Store for two or three days in the fridge covered with plastic wrap.
