ANCIENT GRAINS WITH SHRIMP AND VEGETABLES, a recipe born out of the need for something fresh and quick to make for the summer season.
An alternative to rice or cold pasta, which, alas, we don’t particularly love. Ancient grains are a mix of grains, gluten-free, including hulled buckwheat, Basmati rice, millet, red quinoa, wild rice (black wild rice).
They are a source of fiber, protein, phosphorus, and magnesium, great for our body. They are sold in bags ready to be cooked in water. They were a delicious surprise. You can prepare them with vegetables, eggs, cheese, chicken, fish; in this recipe, we used zucchini, bell peppers, yellow cherry tomatoes, and shrimp. A delight

Ingredients for ancient grains with shrimp and vegetables
- 8.8 oz ancient grains
- 2 zucchini
- 1 sweet bell pepper
- 3 yellow cherry tomatoes
- 12.3 oz shrimp
- to taste salt
- 1 clove garlic
- to taste pepper
- to taste soy sauce
- to taste aromatic herbs
- 4 tablespoons soy oil

Start by cooking the grains in water for about. Once ready, drain them and set aside.
Take the zucchini, wash them and slice them, not too thin, and grill them on the griddle. Do the same with the bell pepper, cut into broad strips, once grilled, remove some skin; it will be softer.
Once grilled, put the sliced zucchini and bell pepper in a baking dish. Season everything with oil, balsamic vinegar, soy sauce, add fresh parsley and garlic, all finely chopped. Let it marinate for about 20 minutes
Now let’s take care of the shrimp, washed, cleaned, and shelled. Sauté them in a pan for a few minutes with oil, a clove of garlic, which we will then remove, soy sauce, fresh chopped parsley, spices
At this point, everything is ready, and we can assemble the various ingredients. In a large bowl, put the grains, add the marinated and chopped zucchini and pepper, and finally the shrimp. Dress with a little oil, soy sauce, salt, spices, fresh aromatic herbs, balsamic vinegar, juice of half a lemon
