Steps for Gluten-Free Apple and Almond Cake

  • Prepare the Oven and Dry Ingredients: Preheat the oven to 356°F (static). In a large bowl, combine the almond flour, cornstarch, sugar, and baking powder. Mix well with a whisk to remove any lumps and ensure all dry ingredients are well blended. This step is crucial for even distribution of the leavening agents and for the final lightness of the cake.
    2. Combine Liquids and Solids: In another bowl, beat the eggs with the melted butter (or coconut oil) until you achieve a homogeneous and slightly frothy mixture. Gradually pour the liquid ingredients into the bowl with the dry ingredients, gently stirring with a spatula or wooden spoon. Continue mixing until the batter is smooth and lump-free, but be careful not to overwork it.

  • The Apples Take the Stage: Peel the apples, core them, and cut them into cubes about 1 cm (0.39 inches). Transfer the cubes into a small bowl and immediately drizzle with lemon juice to prevent them from browning and to add a note of freshness. Add a generous pinch of ground cinnamon and mix well. Gently incorporate the apples into the main batter, distributing them evenly.
    4. Into the Oven! Butter and flour (with rice flour) a 22-24 cm (8.7-9.5 inches) diameter cake pan, or line with parchment paper. Pour the batter into the cake pan, leveling the surface with the spatula. Decorate the surface of the cake with apple slices. Bake the gluten-free apple and almond cake in the preheated oven for about 35-40 minutes. To check if it’s done, perform the toothpick test: if it comes out clean, the cake is ready. Let it cool completely before removing from the pan and serving.
