Today we start with a fish, specifically the baked herring fillets, a really delicious fish main course. I thought of a herring roll, stuffed with cherry tomatoes, capers, and almonds, really simple to prepare, and also particularly good from a nutritional point of view, as herring is an oily fish, therefore rich in minerals, vitamins, phosphorus, potassium, and a high concentration of omega-3.
We should never forget that oily fish contain a higher concentration of beneficial properties for the body; they are also very economical, but not less tasty for that.

- 6 fillets herring
- 5 Peeled cherry tomatoes

Steps for baked herring fillets
Wash the cherry tomatoes and cut them in half, then into quarters and again into pieces. Combine the tomatoes, capers, and almonds, finely chopped, in a bowl, then add the breadcrumbs and oil. Mix the ingredients until you get a crumbly mixture.
Place a bit of mixture on each herring fillet, then roll the herring around itself to form a roll, securing it with a toothpick. Place all the rolls in a baking tray lined with parchment paper (if you want to purchase it click here) and drizzle with extra virgin olive oil to taste. Bake the rolls in a preheated oven at 350°F for 15 minutes. Your herring fillets are ready.
