BAKED HERRING FILLETS

Today we start with a fish, specifically the baked herring fillets, a really delicious fish main course. I thought of a herring roll, stuffed with cherry tomatoes, capers, and almonds, really simple to prepare, and also particularly good from a nutritional point of view, as herring is an oily fish, therefore rich in minerals, vitamins, phosphorus, potassium, and a high concentration of omega-3.

We should never forget that oily fish contain a higher concentration of beneficial properties for the body; they are also very economical, but not less tasty for that.

Ingredients for baked herring fillets

  • 6 fillets herring
  • 5 Peeled cherry tomatoes

Steps for baked herring fillets

  • Wash the cherry tomatoes and cut them in half, then into quarters and again into pieces. Combine the tomatoes, capers, and almonds, finely chopped, in a bowl, then add the breadcrumbs and oil. Mix the ingredients until you get a crumbly mixture.

  • Place a bit of mixture on each herring fillet, then roll the herring around itself to form a roll, securing it with a toothpick. Place all the rolls in a baking tray lined with parchment paper (if you want to purchase it click here) and drizzle with extra virgin olive oil to taste. Bake the rolls in a preheated oven at 350°F for 15 minutes. Your herring fillets are ready.
