Preparation of almond mayonnaise. Pour the soy milk into a blender with the almond flour, a pinch of salt, and start blending while slowly incorporating the vegetable oil, ensuring that the mayonnaise does not “split”. Adjust salt or add water if necessary
Preparation of tartare. Remove the skin from the beets, then cut them into cubes about 0.08 inch. Place the tartare in a bowl and season with extra virgin olive oil, balsamic vinegar, 1 tablespoon of Dijon mustard, salt, chives, and a couple of tablespoons of almond mayonnaise. Set aside
Preparation of candied lemon. Wash and peel the lemon using a peeler, avoiding cutting the white part of the lemon. Then cut the zest into julienne strips lengthwise and blanch them in boiling water for 3 times, remembering to cool them in cold water between each step. Prepare a syrup with 100g of water and 100g of sugar in a small pot. Once the sugar is dissolved, add the blanched zest and let the syrup cool with the lemon peels inside
Assembly. Prepare the tartare using a round cutter about 3 inches in diameter. Place the seasoned beet inside, remove the cutter and garnish with dollops of almond mayonnaise, candied lemon, and a sprinkle of toasted almond slices
