CARAMELIZED VEGETABLES

CARAMELIZED VEGETABLES are an excellent side dish with an oriental flavor.

They can be used on many occasions. As a main dish, or they can accompany burgers, couscous, chicken, rice. They are crunchy and slightly sweet, really pleasant. You can use different types of vegetables to caramelize: onions, carrots, peppers, zucchini. Cut into strips or chunks, they acquire a really particular taste, which fits well with not particularly flavorful dishes.

To prepare them, I used 2 types of vinegar and soy sauce. They are easy to prepare, and you will make a great impression. As an alternative to the usual salad, I recommend trying these excellent vegetables. You can also caramelize them individually, like just onion, or peppers; they are really versatile. Perfect in every season and with different types of meat, boiled or roasted. To season cold rice or couscous, I’ll soon put a recipe of mine for the latter.

Caramelized Vegetables Ingredients

  • 1 onion
  • 2 carrots
  • red pepper
  • yellow pepper
  • 3 zucchini
  • 3.17 oz soy sprouts
  • 1/2 cup apple cider vinegar
  • 1/2 cup balsamic vinegar
  • 4 tbsps soy sauce
  • to taste salt
  • to taste pepper
  • 3 tbsps olive oil
  • 3.5 tbsps brown sugar

Caramelized Vegetables Steps

  • Wash and peel the vegetables. Cut them into sticks or chunks. In a pan, heat the oil and add the vegetables.

  • Add 1/2 cup of apple cider vinegar, balsamic vinegar, brown sugar, and a splash of water. Halfway through cooking, add the sprouts and soy sauce, salt, and pepper. Cook for about an hour, occasionally stirring with a wooden spoon, and there you have your caramelized vegetables ready
