Steps
Let’s start by preparing the dough: in a bowl, combine the flours, baking powder, salt, sugar, vanilla, and egg. Add the butter in pieces and mix everything with your hands until you get large crumbs. Refrigerate
Pit the cherries and place them in a pan with the sugar, grated lemon zest, and cinnamon. Cook for 6 minutes, until they become soft. Transfer the mixture, including the juice, to a bowl, and refrigerate.
Preheat the oven to 350°F. Line a baking pan with parchment paper, and spread half of the crumbled dough, pressing it with your hands. Then add the cherries and cover them with a layer of the remaining dough crumbs. Bake in a well-heated static oven, in the middle part, for about 30 minutes, or until the surface is golden. Let it cool in the pan for at least 2 hours before serving

To achieve a perfect cherry crumble, it’s important to use fresh, ripe cherries. Additionally, avoid overworking the dough to prevent it from becoming elastic. Finally, bake the crumble in a preheated oven until the browning is uniform. It keeps in the fridge for 3/4 days
