The cherry plumcake with ruby chocolate is a truly delicious fruit cake.

I’m crazy about cherries, and in this cake, they are delightful. It’s a simple recipe made with flour, eggs, sugar, and yogurt that make it super soft. With lots of cherries inside and on top, they give it a fantastic fruity flavor, enhanced by the ruby chocolate filling.

Quick to prepare, the secret for a perfect result is to use the ingredients at room temperature, and bake at 356°F (180°C) without opening the oven until a crust forms on the surface of the cake. Great for breakfast, snack, or dessert, everyone will really love it.

  • 1 3/4 cups all-purpose flour
  • 1/4 cup butter (or sunflower seed oil in the same quantity)
  • 3/4 cup sugar
  • 2 eggs (at room temperature)
  • 1/2 cup plain yogurt (at room temperature)
  • 1 packet baking powder
  • 1 tsp vanilla extract
  • 4.5 oz ruby chocolate
  • 4 tbsp sunflower seed oil
  • 3.5 oz cherries (from Vignola)

Preparation of cherry plumcake with ruby chocolate

  • Start by whisking the eggs with the sugar and vanilla using an electric mixer at high speed for at least 3 minutes. It should be fluffy and light. Add the melted, cooled butter or oil and continue whisking.

  • Gradually add the sifted flour, previously mixed with the baking powder, alternating with tablespoons of room temperature yogurt. Mix at medium speed, the dough should be thick and velvety. Once ready, add part of the washed and pitted cherries, stirring gently with a spoon.

  • Take the loaf pan and line it with parchment paper, then pour in the batter. Place the remaining cherries on top. Bake at 365°F (185°C) in the middle-top section of a static oven, bake for about 40 minutes

  • Put the ruby chocolate(if you don’t know where to find it click on the writing) in a saucepan with 4 tablespoons of oil and melt in a double boiler. Once ready, pour it over the cooled plumcake and decorate with the cherries
