CHERRY TART WITH FRANGIPANE CREAM

The CHERRY TART WITH FRANGIPANE CREAM is a summer delight. I’m trying
to use cherries everywhere, the combination with the tart was inevitable.

A delicious recipe, with a filling based on eggs, butter, sugar, and almonds, which bakes together with its pastry shell and is literally irresistible.

It is prepared very quickly and is easy to make, with few and healthy ingredients. It can be enjoyed for breakfast, or at the end of a meal, always perfect, it’s part of those desserts that I call “day savers”

  • 1 tbsp vanilla extract

  • 1 cup almond flour
  • 6 tbsps butter
  • 1/2 cup sugar
  • 2 eggs
  • 9 oz cherries

Preparation for cherry tart with frangipane cream

  • Let’s start by preparing the pastry. In the stand mixer, place the flour with the sugar, a pinch of salt, the vanilla extract, and the cold butter cut into cubes. Mix everything until you get a sandy mixture, add the egg and knead again. When you have obtained a ball, wrap it in plastic wrap and put it in the fridge for about 30 minutes

  • We prepare the frangipane cream. Beat the butter with the sugar with an electric whisk until the mixture is soft and fluffy. Add the eggs one at a time, stirring and alternating them with the previously ground almonds, almost a flour.

  • In a rectangular 8×9.5 inch pan, lay the pastry, rolled out into a sheet about 1/10 inch thick, on parchment paper. To cover the bottom and part of the sides. Prick the dough with a fork and pour in the cream.

  • Pit the cherries and place them on the cream, covering the cake. Bake in the lower part of the oven at 356°F for about 40 minutes. Let it cool before serving

The cake keeps in the fridge for 2 or 3 days
