Steps for chestnut flour cookies
Mix the chestnut flour with butter and unsweetened cocoa powder. You can mix by hand or use a stand mixer (with K beater) to get a sandy, slightly grainy mixture. Add powdered sugar and a pinch of cinnamon to the butter and flour mixture and mix again using the same method. Finally, incorporate the egg, working quickly and for a short time to get a homogeneous chestnut shortcrust dough. Wrap the dough in plastic wrap and let it rest in the fridge for about half an hour.
