This cold chestnut dessert is the first dessert I remember from my childhood; I would wait for autumn to eat it, naturally with the arrival of chestnuts.
I loved it then and I love it now. It’s fantastic, the taste is a joy for the palate, its smell and color remind me of autumn; it is autumn. It basically has few ingredients: chestnuts, chocolate, butter, sugar, and amaretti, and finally a sprinkle of almonds.
Simple to make, perfect for treating yourself, you will see you will like it very much. I chose this dish for my return to the blog, after a pause unfortunately due to family reasons, but after all, this 2020 is not easy. Perfect for the end of important lunches or dinners, even for the Christmas holidays, it might turn out to be a somewhat alternative dessert. Try it now!

Ingredients for Cold Chestnut Dessert
- 2.2 lbs chestnuts
- 3 cups cups milk
- 1/2 cup sugar
- 1/2 vanilla (bean)
- 1 pinch salt
- 7 tbsp butter
- 1/4 cup unsweetened cocoa powder
- 3.5 oz amaretti
- as needed rum
- 1.8 oz almonds (chopped)
- 1/2 cup whipping cream

Preparation of Cold Chestnut Dessert
Remove the shells from the chestnuts, then immerse them in boiling water for about 5 minutes, drain, and peel off the inner skin. In a saucepan, bring the milk to a boil with the sugar, vanilla (which you will remove), and salt. Pour in the chestnuts and let them cook slowly for about 1 hour. Pass everything through a sieve, return the mixture to the saucepan, and let it thicken over moderate heat, stirring continuously.
Remove from heat and, when it is cool, mix in the butter, chocolate, and rum. Line an 18 cm wide and 7 cm high mold with moistened parchment paper, pour in a part of the mixture, place a layer of amaretti soaked in rum on top, cover with another layer of chestnuts, repeat the amaretti layer, and finish with the remaining mixture.
Place the dessert in the refrigerator for a few hours, then put it on a plate, remove the paper, and garnish the outside with chopped almonds and a few dollops of cream, and here is the cold chestnut dessert
