Fluffy puffed omelette, today I present an easy and quick recipe. These days I don’t have much time unfortunately, so I thought of a quick but tasty recipe, fluffy with few fats, an alternative omelette, baked in the oven, whipping the egg whites and then incorporating them into the yolks, hence why it’s puffed.
In this way, you will have a tasty and soft fluffy puffed omelette, you will like it, and then it can be filled in different ways. Instead of the speck I used in this recipe, you could use ham, bacon, or mortadella, paired with other soft cheeses like gorgonzola… so let your imagination run wild. Once you’ve tried it, you’ll make it several times; it can solve the lunch or dinner problem very quickly and with great satisfaction, serve it with a fresh salad, enjoy your meal.

Steps for Fluffy Omelette
In a bowl with a hand whisk, beat the yolks with the flour, milk, salt, and pepper. Mix everything well, add the egg whites whipped to stiff peaks, and fold gently from top to bottom.
Pour the mixture into a baking pan lined with parchment paper, and bake in a preheated oven at 356°F for 15 minutes. Once ready, remove the pan, top the omelette with slices of speck and stracchino, bake for a few more minutes, and your puffed omelette is ready, enjoy your meal.
