With fried amaretti, tradition meets indulgence: a nostalgic dive into childhood memories that transforms into an unforgettable taste experience. These delicious fried bites, where the main element is the amaretto, soaked in milk and rum, are covered with a light batter, which is then fried.

  • 1/2 cup milk
  • 1 tbsp butter
  • 7 oz amaretti
  • 1 egg
  • 1/2 glass rum
  • as needed peanut oil
  • pinches salt
  • powdered sugar (for decoration)

Fried Amaretti Steps

  • Let’s prepare the batter: soften the butter in a saucepan and then pour it into a bowl ( glass bowl). Combine the sifted flour, the yolk, 20ml of milk, and a pinch of salt. Stir to blend the ingredients

  • Add a few tablespoons of water if necessary, to achieve a batter as thick as cream. Seal with plastic wrap and let rest for 20 minutes

  • Whip the egg white to stiff peaks with an electric mixer and combine them with the batter, without overworking it. Meanwhile, in a bowl, mix the remaining milk with the rum. In a high-sided pan, pour the oil and heat over medium heat

  • Meanwhile, dip one amaretto at a time in the milk and rum mixture, drain, and pass it through the batter. Coat it completely before dropping it into the hot oil (peanut oil)

  • Cook the fritters for 4/5 minutes, turning them when they are puffed on one side

    Drain them with a slotted spoon when they are golden and place them on a plate covered with absorbent paper. Dust with powdered sugar and serve

Storage, notes, tips for fried amaretti

Advice, do not leave the amaretti in milk or batter for too long, they will lose their shape. Use a small pan and fry 2 fritters at a time. Choose high-quality amaretti, with an intense flavor and crumbly texture. Use a neutral-flavored seed oil for frying the amaretti. Serve the fried amaretti hot or warm, dusted with powdered sugar.
