GLAZED APPLE PORK SHOULDER

Steps for Glazed Apple Pork Shoulder

  • Wash the apples and slice them evenly, slice the onion. Set aside.

    Take the shoulder, make slits in the back to create pockets. The space between each cut should be at least 0.6 inches, so not too thin. Insert 2 apple slices and an equal amount of bacon into each slit, along with a bit of meat spice mix. Once stuffed, tie it all with kitchen twine to prevent the pockets from reopening and losing the contents. Sprinkle with the rest of the spice mix, salt, and pepper.

  • Place the onion and remaining apple slices at the bottom of the baking pan, season with salt, oil, and pepper, place the shoulder on top, and pour two tablespoons of honey over it. At this point, put it in a preheated oven at 320°F and let it cook for about 1.5 hours, ensuring the bottom does not dry out.

  • Once cooked, create a sauce by taking only the apples and onions from the bottom, placing them in a mixer, and blending. Meanwhile, warm the tomato sauce in a pan, where you will add the apple and onion sauce for 5 minutes, then strain it through a fine-mesh strainer, and it is ready.

    Remove the string, slice the meat, and garnish with the sauce.
