Grandma’s apple cake, who has never made an apple cake?
Maybe because it’s too simple, I thought everyone had an apple cake recipe in their drawer, I hadn’t thought of publishing it. But I changed my mind, after all, apple cake is a classic, and there are countless versions, so why not publish mine? And then this apple cake reminds me of the stories my grandma used to tell me, after the story there was always a slice of apple cake waiting for me.
The first real apple cake recipes date back to the Middle Ages. Their use in the kitchen arose from a specific need: to make up for the lack of preservation methods and make the most of the harvest with as little waste as possible. Hence the idea of cooking them. This recipe from my grandma, I like because it’s super easy, very quick to make, light, because it uses oil instead of butter, not too sweet, soft, delicious, and a family memory

Steps for Grandma’s Apple Cake
Peel and slice the apples, drizzle with lemon juice, flavor with cinnamon and a tablespoon of sugar, and let it rest while you prepare the batter.
In a bowl, beat eggs with sugar using an electric mixer. Add oil, milk, and sifted flour with baking powder and a pinch of salt. Grease the baking pan, pour half of the batter, and spread well with a spoon. Add half of the sliced apples, cover the base. Add the remaining batter, covering well, arrange the remaining apples trying to insert them upright in a radial pattern. Sprinkle a little sugar on top, preferably brown sugar.
Bake at 340°F for about 45 minutes in static mode. Once baked, let it cool, dust with powdered sugar, and if desired, you can glaze the apples with apricot jam heated with a drop of water.
