Melon and prosciutto salad, a summer recipe, easy and quick,
This recipe includes very few ingredients but 2 types of melon: cantaloupe with orange color and winter melon with green color, and naturally Parma prosciutto.
The melon and prosciutto salad is dressed with olive oil, lemon juice, a touch of honey, and many mint leaves, a perfect combination that makes it fresh and particularly tasty. I cut the melon in half and made these beautiful and decorative balls, so I could serve it differently from the classic slice with prosciutto. Tell me if it isn’t beautiful!

Steps for Melon and Prosciutto Salad
Cut the melon in half, remove the seeds, and with a kitchen scoop, create balls, which you will put in a bowl. Proceed this way for both melons. Add the chopped mint and a bit of salt and pepper
In a bowl, mix together the lemon juice, oil, and honey. Pour over the melon and gently toss to coat
Plate the salad and add the prosciutto, rolled on itself. Garnish with more mint leaves
Tips and Variations for Melon and Prosciutto Salad
You can add small buffalo mozzarella balls to the salad to make it a bit richer. If you don’t like mint, you can substitute it with basil. Add the dressing just before serving the salad
