Mimosa Cake Steps
Prepare the sponge cake base, follow the published recipe
Once ready, let it cool and cut 3 thin layers. Scrape all the brown crust off the first layer, doing so lightly with a small knife, then slice it into pieces about 0.4 inches.
Stack the remaining bases and trim the edges with a knife until you have a 7.8-inch round; use the leftovers, removing slightly burned parts, and cut them into small pieces for decoration with the other cubes.

To make the syrup, bring water and sugar to a boil. Dissolve the sugar and flavor as desired; let it cool completely before use
When the pastry cream is cold, prepare the diplomatic cream by simply adding the previously whipped cream with powdered sugar and gently incorporating it from the bottom upwards
Place the first sponge cake circle on a cake plate that will be used for serving. Brush with syrup, without overdoing it, add the first layer of cream, a new layer of sponge cake, soak, and another layer of cream. With a rounded tip knife, spread the cream over the entire edge of the cake and also on top. Once covered, add the sponge cake pieces on top, starting from the surface and then the sides. The mimosa cake is ready; let it chill in the fridge for 30 minutes before serving
