The dome cake, a dessert that belongs to the Tuscan culinary tradition and is generally prepared during the Christmas period. Let’s say that only the shape of the original dome cake remains. I completely changed the ingredients: mascarpone and cream instead of ricotta, chestnuts instead of candied oranges, and Pavesini instead of sponge cake. I assure you, however, that it is really delicious, simple and quick to make, and spectacular to look at. An alternative dome cake that will become addictive

- 1 cup mascarpone
- 1/3 cup powdered sugar
- as needed Pavesini
- 10.5 oz marron glacés
- as needed unsweetened cocoa powder
- 1 cup coffee
- 1 shot rum
- 11.3 oz chestnut cream

Steps for Pavesini Dome Cake with Chestnut Cream
In a bowl, place the mascarpone, cold, mix with a spoon, add the liquid cream, cold, and beat everything with electric whisks. Just before the mixture is ready, add the powdered sugar. The consistency can be seen in the picture
Add the chestnut cream, little by little, mixing from bottom to top
Finally, chop the marron glacés rather coarsely and add them to the cream. Keep about 3 aside for the final decoration. The cream is ready
Line a dome cake mold or an aluminum bowl (diameter 6 inches) with plastic wrap. Dip the Pavesini in the coffee and rum solution, a couple at a time. They should not be too wet, and start lining the bowl. Do the base first, then the rest of the bowl
Once the bowl is lined with Pavesini, pour the cream to fill it. Close the base of the dome cake with the rest of the Pavesini, then place it in the fridge for 4/6 hours.
Unmold the dome cake, well chilled, onto a plate, dust it with plenty of cocoa, decorate with a few marron glacés, and serve
