Piacentina Parsley Green Sauce Steps

  • Wash, drain, and dry, gently patting between 2 towels, a nice bunch of parsley. Remove the leaves and finely chop them with the mezzaluna, on a cutting board, adding 1 or 2 peeled garlic cloves.

  • Meanwhile, soak the breadcrumbs from the rolls in a bowl with vinegar for about 15 minutes. Put the parsley and garlic mixture in a bowl, add the finely chopped hard-boiled yolks, the well-squeezed bread, a pinch of salt, pepper, and dilute everything with olive oil. Mix well, when everything is well combined, the sauce is ready. Pour into a gravy boat.
