Steps for Plum Cake with Almond Cream

  • Preheat the oven to 356°F. Lightly butter a round cake mold, 9 inches in diameter. Roll out the puff pastry, making it adhere to the bottom and sides, gently pressing with your fingers; fold the excess dough inward. Prick the bottom with a fork to prevent it from puffing up, bake the pastry for 15 minutes to make it crispy and golden. Remove from the oven and let it cool.

  • Prepare the filling. Place the cracked eggs in a bowl with the sugar, chopped almonds, and cream. Beat vigorously with electric whisks or by hand if preferred, until obtaining a smooth and lump-free mixture.

  • Wash and dry the plums, cut them in half, remove the pit. Pour the filling onto the pastry base and cover the surface with the plum halves, placing them skin-side up. Bake for 25 minutes at 356°F until the mixture has set. Remove from the oven and let it cool

  • Place a pan over medium heat, add the sliced almonds and toast for a few moments, stirring with a wooden spoon. Then sprinkle them over the plum cake and serve
