Steps for pork loin in grape sauce
Let’s brown the loin in a pan with oil and the garlic clove on all four sides
Transfer the meat to a baking pan where I’ll add the butter on top of the meat, a mince of garlic and rosemary, the wine, soy sauce, pepper, and some grapes.
Bake at 158°F for about 1 hour and 30 minutes, until the meat reaches a temperature of 140°F. If you want faster cooking, set the temperature to about 320°F.
Once cooked, serve on a platter with the grape sauce and a side of speck that you have diced and toasted in a pan with a little oil, 5 minutes before the meat is done. Enjoy your meal
