Preparation of pork loin with apple and pepper
Let’s take care of the meat, pat it with paper towels, then coat it in flour. In a saucepan, sauté the finely chopped onion with 5 sage leaves in 2.8 tbsp butter and a drizzle of oil. Add the loin, browning it well on each side until golden; deglaze with brandy and let it evaporate. Take the apple and slice it to about 1/4 inch thick, cut the slice in half, or leave it whole, depending on the thickness of the meat you have.
Now for the most important moment. Remove the meat from the saucepan, place it on a cutting board, wait a few minutes for it to cool slightly. Then make crosswise cuts almost to the bottom of the meat about 0.8 inches apart. Place the apple slices in each cut, put the loin back in the pan. Pour the broth, lower the heat, cover, and cook for about 2 hours over low heat, adding broth if the cooking base reduces too much.
In the meantime, take the peppercorns and crush them roughly together with a meat tenderizer. After about an hour and a half of cooking, sprinkle the crushed peppers on top, adjust the salt, and let everything cook for the last 30 minutes to soak in the flavor. Then add the cream or milk and let the base reduce for about 10 minutes until a really inviting sauce forms. Let it rest for a few minutes, slice, and serve
