Preparation of pork ribs with mustard and honey
Let’s prepare the marinade for the ribs. In a small saucepan, mix the wine, oil, and honey over low heat until the honey dissolves. Pour the mixture into a bowl, add the onion, half the amount of garlic cut into pieces, half the amount of rosemary, a pinch of salt and pepper, the spices, Worcestershire sauce, and soy sauce.
Take the ribs, make small cuts into the meat and insert pieces of garlic and rosemary leaves, then brush them with mustard. Transfer the ribs to a non-stick baking dish, cover them with the marinade, turn them well, and massage them with the liquid. Then cover the dish with plastic wrap and keep it in the fridge for at least 3 hours.
About 20 minutes before starting the cooking, take the baking dish out of the fridge and let it come to room temperature. Meanwhile, preheat the oven to 356°F with the static function. Move the ribs to another baking dish and strain the marinade with a fine mesh sieve, and add part of the filtered liquid to the ribs along with the water. Bake for about 1 hour, making sure there is liquid remaining at the bottom. Set the oven to grill mode, raise it to 392°F, and grill the ribs for 5/10 minutes.
Take a non-stick pan, add the tomato sauce and heat it, add the rest of the marinade base with the sugar, stir until it becomes thick. Once ready, remove from heat and strain the sauce obtained with a spatula and a fine mesh sieve. Your sauce is ready, transfer it to a bowl, and serve it with the meat.
