Sliced Chicken with Herbs: The Secret to a Tender and Flavorful Chicken Tagliata
Food lovers, are you looking for a main course that is at the same time quick, light and full of flavor? I have the answer for you: the sliced chicken with herbs! Forget the sad, dry chicken breast you always cooked. Here we transform it into a masterpiece of tenderness and aroma, thanks to a preparation that is simple but effective. The secret is to cook the meat over medium heat, adding a splash of white wine that keeps it moist and tasty. Aromatic herbs, such as thyme and rosemary, add an unmistakable freshness that turns a common ingredient into a restaurant-quality dish. It’s the perfect idea for a last-minute dinner or for a light lunch, perhaps with a side of fresh vegetables. A dish that smells of summer and simplicity.
Aromas and Textures: The Perfect Combination for a Unique Taste
The real strength of this sliced chicken with herbs is the harmony of flavors that is created. The light, thin coating helps seal the meat’s juices, ensuring it stays tender inside. Adding the aromatic herbs, both in the coating and during cooking, gives off an aroma that fills the kitchen and previews the intense flavor of the dish. Lemon thyme in particular adds a fresh, citrus note that pairs wonderfully with the delicacy of the chicken. The white wine, used to deglaze the pan, not only lifts the cooking fond but adds acidity that balances everything, creating a light and flavorful sauce. The result? A juicy, aromatic tagliata, ready to serve.

Preparation of sliced chicken with herbs
I used sliced chicken (tagliata), but if you can’t find it use 2 chicken breasts; slice them into thick slices with a sharp knife.
Place the flour on a plate in an amount sufficient to coat all the chicken slices. Once breaded, sprinkle them with a mix of salt, pepper, and aromatic herbs. I used thyme and oregano and during cooking I added lemon thyme and fresh rosemary.
In a pan pour a little extra virgin olive oil and let it heat over medium flame. When the oil is hot, add the chicken slices. Add the white wine little by little and the rest of the aromatic herbs. Cook over medium heat for about 10 minutes, turning the meat occasionally, avoiding drying it out, which could make it tough.
Once cooked, serve on a serving plate and garnish with extra aromatic herbs.
