Star cookies with royal icing, and here we are almost at Christmas, how can you not make cookies?
Impossible I say, it’s not Christmas if you don’t make them at home, the preparation, thinking about how to decorate them, the shape or forms that remind us of the Christmas period. All this brings you back to family, memories, the smell of freshly baked cookies, happiness.
I prepare them every year, with a recipe that has been tested for years from family tradition. A sweet and crumbly shortcrust pastry, with a variable mix of flavors, which can be lemon peel, orange, cinnamon, vanilla, powdered sugar instead of granulated and no yeast. You will get a delicious and fragrant consistency. Like all shortcrust pastry, it must be worked cold and very quickly, follow all the tips and you will see perfect cookies

- 2 3/4 cups all-purpose flour
- 7 oz butter (cold from fridge)
- 2/3 cup powdered sugar
- 2/3 cup brown powdered sugar
- 2 egg yolks
- 1 lemon (grated peel)
- 1 tsp vanilla essence
- 1 cup vanilla powdered sugar

Steps for star cookies with royal icing
In a stand mixer, place the cold butter cut into pieces and the sifted flour. Attach the flat beater, give it a few turns at high speed, and it will form a crumbly texture called “sanding.” Add the sugar, eggs, and grated lemon. Turn at high speed, it will all combine in a few seconds
At this point transfer the dough onto a marble or plastic surface, knead for a few seconds with floured hands and compact the shortcrust pastry. Form a ball, wrap it in cling film, flatten it and put it in the fridge for about half an hour
Once the time in the fridge is up, place the shortcrust pastry on a marble or plastic surface. Flour the work surface, this operation will allow you to roll out the dough without it sticking. With a floured wooden rolling pin, roll out the dough sheet gradually and slightly, stretching it without it sticking to the surface, move it sideways
Roll out the dough to a thickness of about 1/5 inch, and cut out the cookies with a cookie cutter, in this case in the shape of a star, a clean cut, gently detach it and place it on a baking tray lined with parchment paper. Place the cookies at a distance of 1/5 inch. Put them in the fridge for 20 minutes. Bake in a preheated oven at 356°F for 12 minutes, until lightly golden. Remove them from the oven and let them cool without moving them, so as not to deform them. Now you can proceed to decorate them with royal icing
In a bowl, work the egg white with the lemon juice, foam the mixture for a few seconds with the electric whisk. Add the sugar and mix it all with the whisk, and it is ready, if you don’t intend to use it immediately, cover it with a cling film in contact with it and put it in the fridge
Let’s proceed with the decoration of the cookies which must be cold, put the icing in a pastry bag, and cover the cookie, to define the edges help yourself with a toothpick. If you want to decorate with beads or sprinkles, place them before the icing dries, however, it will take at least a couple of hours
