Ingredients
- 1.3 lbs zucchini (small/medium)
- 7 oz stracchino cheese
- 5 egg yolks
- to taste chives
- 1 bunch parsley
- 1 tbsp grated Parmesan cheese
- to taste butter
- pinches salt (1)
- to taste pepper
- 1.5 cups all-purpose flour
- 7 oz butter
- 1.75 oz water
- 1 pinch salt

Steps
Let’s prepare the brisée pastry. In the mixer, put the flour with the butter cut into pieces, and the salt, mix with the paddle attachment, until you create a kind of sandy flour. Add the water a little at a time. Mix until well combined
When the dough pulls away from the sides, take it out, form a ball. Wrap it in cling film and let it rest in the fridge for about 30 minutes
Remove from the fridge, roll out the dough on a floured surface to a thickness of 1/8 inch. Line a 10-inch cake pan with parchment paper, and place the crust inside, prick the bottom with a fork. Bake in a preheated oven at 356°F for about 15/20 minutes. Then let cool
Wash and slice the zucchinis into rounds about 1/4 inch thick. In a pan with a knob of butter, sauté the zucchinis, add some spices to taste, for about 10 minutes. Let cool slightly, and finally add salt.
In a bowl, work with a whisk, the stracchino cheese with the egg yolks, the tablespoon of Parmesan, salt and pepper, and the chopped herbs
Retrieve the quiche and distribute the cheese mixture inside, cover with the zucchinis arranged in a circle. Sprinkle with Parmesan and bake at 356°F for about 10 minutes. The quiche is ready
