The air fryer apple tart is a real treat for the palate, made with Benedetta Rossi’s oil-based pastry recipe, it will not disappoint you.
Unlike classic pastry, the oil-based one does not require resting and can be used immediately.

Ingredients for the air fryer apple tart:
- 9.5 oz yellow apples
- 1/2 lemon (the juice)
- 2 tablespoons ground cinnamon
- 1/4 cup granulated sugar
- 1 medium egg (at room temperature)
- 2.7 tablespoons vegetable oil
- 1/4 cup granulated sugar
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- as needed powdered sugar

Steps for preparing and cooking the apple tart in the air fryer:
Peel the apples, remove the core, and cut them into small cubes. Place them in a bowl, add the lemon juice, and stir well to prevent them from browning.
In a pan, place the granulated sugar, turn on the heat, and when it melts, add the apples and ground cinnamon, stir well and cook for a few minutes until the apples are well caramelized, turn off the heat and let cool.
In a large bowl, place the room temperature egg and sugar, beat the ingredients well with a whisk, add the vegetable oil, and incorporate it with the other ingredients. Then add the sifted baking powder and gradually the flour, mix the ingredients well, then transfer them to a pastry board and shape into a smooth and homogeneous dough, divide it into two parts, one larger than the other.
With the rolling pin, roll out the larger piece into a sheet about half a centimeter thick, then line an 18/20 cm pan with parchment paper and place it on the pie dish (adjust the pan size according to your air fryer’s measurements), spread the dough well and trim the excess.
Add the now cool apples and make an even layer.
With the remaining dough, make stripes and lay them on top of the tart.
AIR FRYER COOKING:
Place the pan on the air fryer grill, close the drawer, and cook at 320°F for 8 minutes, then at 356°F for about 4 minutes. Always check the cooking as the times may vary slightly depending on the appliance model.
Let the tart cool and sprinkle with powdered sugar.
OVEN COOKING:
Bake at 356°F for about 20 minutes.
Advice:
The amount of pastry (compared to the original recipe) is halved because to cook the dessert in the air fryer we used an 18/20 cm pan.
