Bacon-wrapped sausages in an air fryer is an easy and tasty recipe that my mom always prepared when she had dinner guests. She used to bake them in the oven and it was always a hit.
Many years later, I remembered this recipe and made an air fryer version.
Great as an appetizer or with a cocktail, you can also use the larger sausages and turn them into a main dish.

Ingredients for Bacon-Wrapped Sausages in an Air Fryer:
- 8 sausages
- 16 slices bacon (thinly sliced)
- 3 slices scamorza cheese (about 1/5 inch thick)

Steps for Preparing and Cooking Bacon-Wrapped Sausages in an Air Fryer:
On a cutting board, place the slices of provola cheese about 1/5 inch thick, then cut each slice into strips about 2/5 inch wide; you should get about 12 strips.
Cut the sausages lengthwise in half but without completely separating them, then insert the cheese strips, about one and a half strips, into the sausages and close them.
On a cutting board, place two slices of bacon overlapping and roll them around the sausage, repeat this procedure with all available sausages.
Place the bacon-wrapped sausages on the air fryer grill (if it’s small, you need to do two batches) and cook at 320°F for 13 minutes; if you want the bacon more golden, use the grill function for a couple more minutes after cooking finishes.
Serve the sausages while still hot with the cheese melting.
Tips:
You can also use smoked provola or another melting cheese like fontina.
