Air Fryer Easter Pie

The air fryer Easter pie, a typical Ligurian preparation for the Easter period, the original version involves making the sheets with flour, water, and oil, we offer it in a quicker version with puff pastry.

Inside, a filling of chard and ricotta then in other variants with spinach or artichokes, mushrooms or pumpkin, eggs are also added inside and become hard-boiled during cooking.

Curiosity: It is said that in ancient times housewives would stack 33 sheets in homage to the years of Christ.

Ingredients for the air fryer Easter pie:

  • 2 rolls round puff pastry
  • 12 oz boiled spinach
  • 1 clove garlic
  • 2 tbsps extra virgin olive oil
  • 7 oz ricotta
  • 1 medium egg
  • 3 tbsps grated Parmesan
  • to taste fine salt
  • to taste black pepper
  • 4 medium eggs
  • to taste whole milk

Steps for preparing and cooking the air fryer Easter pie:

  • In a pan, put the extra virgin olive oil and the garlic clove, turn on the heat and let the oil flavor, add the coarsely chopped spinach, salt, and cook for 5 minutes, so that the spinach dries well and flavors, turn off the heat, remove the garlic clove and let it cool well.

  • Take a bowl and put the spinach, add the ricotta and start mixing the ingredients, then add the Parmesan, egg, salt, and pepper and work the ingredients until you have a homogeneous mixture.

    Line a 7-inch springform pan with a roll of puff pastry, cut off the part that protrudes from the pan, prick the pastry with a fork, put the spinach mixture inside, and level it well, then make 4 hollows and place an egg inside each.

    Cut a 7-inch disc with the second roll of pastry and place it on top of the filling, seal the puff pastry well.

    Brush it with milk or if you prefer you can brush it with a beaten egg.

  • Place the basket in the air fryer (make sure to test the pan fits well in the fryer) on the rack, close the fryer drawer.

    Cook at 356°F (180°C) for 25 minutes, until golden brown, check that the bottom of the pie is also well cooked otherwise continue cooking for another 4/8 minutes.

    After the time has elapsed, remove the pan from the air fryer and let it cool slightly, serve the pie in slices.
