In a saucepan, place the whole milk (you can also use semi-skimmed or skimmed), a knob of butter, salt, and a sprinkle of nutmeg. Put it on the heat and bring it almost to a boil. When the milk is almost boiling, add the semolina, stir well with a manual whisk or a wooden spoon and keep stirring until it cooks, that is when the semolina detaches from the sides of the pan, it will take 5/8 minutes on medium heat otherwise it will tend to stick.
Turn off the heat and let the mixture cool slightly, add an egg yolk, mix well to blend it into the mixture, add the other yolk and blend it into the mixture, and finally add 90 grams of parmesan. Stir the mixture well and transfer it to a baking dish lined with parchment paper and spread it to a thickness of about 0.4 inches, let it cool well, you can easily prepare it the day before and store it in the refrigerator.Take 2 baking dishes 8×8 inches or the size of your air fryer and butter them. Take a pastry cutter with a diameter of 2 inches and cut out several discs with the dough and transfer the discs into the baking dish, overlapping them with each other (with this amount, about 30 discs will be made). The various trimmings can be placed under the discs in this way they are not visible but are delicious to eat. You can use either a round pastry cutter or a flower-shaped one.
