Apple and raisin waffles, a true delight for the palate, ideal for starting the day sweetly with healthy ingredients.
The waffles with apples and raisins are also suitable for a delicious snack, we served them only with powdered sugar and cinnamon, but you can also add maple syrup or fresh fruit.
The gaufre is a Belgian waffle dessert that is cooked in a very hot double plate where the characteristic grid appearance of waffles is given, the outer part is crispy while the interior is soft. A preparation known in almost the whole world and each nation has its own variant (wikipedia), it takes a different name and is prepared in a variety of ways, some use brewer’s yeast, others use the classic baking powder.
For the waffle recipe, we used the basic recipe for classic waffles.

Ingredients for apple and raisin waffles:
- 1 apple
- 1.8 oz raisins
- 1 small glass rum (optional)
- 2 medium eggs (at room temperature)
- 3 tbsp granulated sugar
- 6 tbsp melted butter
- 1.5 cups all-purpose flour
- 1 tsp baking powder
- 3/4 cup whole milk
- as needed lemon juice
- 1 pinch fine salt
- as needed ground cinnamon
- as needed vegetable oil
- as needed powdered sugar
- as needed ground cinnamon

Steps for preparing and cooking the apple and raisin waffles:
In a small bowl, place the raisins, add the rum and let it rest for 15 minutes so that the raisins soften; alternatively, you can just use warm water instead of rum.
Peel the apple and grate it using a mandoline, sprinkle lemon juice on top to prevent it from browning.
In a bowl, place the egg whites with a pinch of salt and whisk them until stiff peaks form. In another bowl, place the egg yolks with the granulated sugar, beat the mixture until it is almost white and fluffy.
Add the melted butter (it should not be hot but nearly at room temperature) and milk, incorporate them into the egg mixture.
When you have obtained a homogeneous mixture, add the sifted flour with baking powder and a dash of cinnamon (optional), mix the mixture well with the electric whisk until it is smooth and homogeneous.
Squeeze the raisins and add them to the mixture, also add the apples after squeezing them well, fold in the previously whisked egg whites with a spatula using downward and upward movements so as not to deflate the egg whites.
Heat the waffle maker, then brush the plate with vegetable oil and pour some batter to completely cover the surface, close the plate and cook until golden (about 3 minutes).
Carefully remove the waffles from the plate using a silicone spatula and place them on a serving platter, continue cooking the other waffles until all the batter is used up; this quantity makes 7 waffles.
Dust with a mix of powdered sugar and ground cinnamon.
