While reading the recipe, you will notice that at some point the apples need to be soaked in water with lemon juice and zest. I haven’t written the procedure incorrectly; that’s exactly how it is in the recipe. Don’t worry, the apples are then drained and added to the dough. - 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 7 tbsp butter
- 2 medium eggs (at room temperature)
- 3/4 cup whole milk
- 1 tsp ground cinnamon
- 1 packet baking powder
- 1 1/2 lbs yellow apples
- 1 lemon (untreated)

Steps for Preparing and Baking the Apple Cake by Iginio Massari:
Peel the apples, halve them, remove the core, and cut into thin slices, place them in a large bowl.
Add the lemon juice and grated zest to the bowl, then add cold water until the apples are covered, stir well and let rest.
In another bowl, put the eggs and half of the granulated sugar, start to whip them with an electric mixer, and when they are frothy add the remaining sugar and finish whipping the eggs.
Add the ground cinnamon, little by little the sifted flour with baking powder, and finally the previously melted butter at room temperature and milk.
Whip the ingredients well until you get a smooth and homogeneous mixture.
Drain the apples from the water, we put them for a few minutes in a large colander, then add them to the mixture and with a spoon incorporate them into the mixture.
Grease and flour a 9-10 inch springform pan, pour in the batter, level it well, and bake in a preheated oven at 350°F for about 45 minutes, always do the toothpick test.
If you see that during baking it tends to darken too much cover it with a sheet of aluminum foil after the first 20 minutes of baking.
Let the cake cool and transfer it to a serving plate, before serving, dust it with powdered sugar.
