Artichokes with anchovies in the pressure cooker, a tasty, original side dish that is easy and quick to prepare, perfect to offer even at holiday lunches with a good meat second course.

Ingredients for Artichokes with Anchovies in the Pressure Cooker:

  • 4 artichokes
  • 1 clove fresh garlic
  • 4 tablespoons extra virgin olive oil
  • 2.5 fl oz dry white wine
  • 2 fl oz vegetable broth
  • 6 fillets anchovies
  • to taste fine salt
  • to taste pepper
  • to taste chopped parsley

Steps for Preparing and Cooking Artichokes with Anchovies in the Pressure Cooker:

First, clean the artichokes, in a large bowl put some water with lemon juice.

Take an artichoke, remove the tougher outer leaves, then cut off the tips with a sharp cut, trim the stem, and remove the tougher outer layer.

Cut it in half lengthwise, remove any choke, and cut the artichoke into 4 parts and place them in the lemon water prepared earlier, cut the other half of the artichoke into 4 wedges and continue with the same procedure with the other artichokes.

We recommend wearing gloves to prevent your hands from getting stained by the artichokes and to better protect your hands from the spines.

  • In the pressure cooker, place the garlic clove and extra virgin olive oil, allow it to infuse well, then add the anchovy fillets, let them infuse, and then add the artichokes previously drained from the water, white wine, broth, salt, and pepper (do not add much salt as the anchovies are already flavorful).

  • Close the cooker, bring it to pressure over medium heat, then lower the heat to a minimum and cook for 9 minutes.

    After the time has elapsed, turn off the heat, turn the valve to release the pressure, remove the lid, and transfer the artichokes to a plate, sprinkle with fresh chopped parsley if desired.

  • PROCEDURE WITH THE MULTICOOKER.

    Prepare the artichokes as per the recipe, then in the multicooker basket, place the oil, garlic clove, and anchovy fillets, and with the SAUTÉ program, let it infuse well, then add the other ingredients, select the pressure cooking program, cover with the lid and cook for 9 minutes.

    After the time has elapsed, turn off the cooker, turn the valve to release the steam, and remove the lid.

Tips:

Once cooked, immediately remove the garlic clove to prevent an unsuspecting guest from accidentally eating it.

To speed up preparation, you can also purchase pre-cleaned artichokes found in the fresh produce section.
