- 3 Saucepans
- 1 Spoon
Preparation and cooking of baked pasta with sausage:
Prepare the béchamel by following this recipe: BÉCHAMEL WITHOUT BUTTER doubling the quantities.
Prepare the sauce by placing the mixed vegetables (carrots, celery, onion) in a saucepan, add the extra virgin olive oil and sauté well, add the sausage without skin and crumbled, cook for about 10 minutes over low heat, deglaze with the white wine and when it has evaporated, add the tomato sauce, adjust the salt and cook for 30/40 minutes.
Bring salted water to a boil in a saucepan, cook the pasta considering half of the al dente cooking time.
In a large bowl, mix half of the ragù with half of the béchamel, stir well, add the drained pasta and mix the mixture well to let the pasta soak up the flavors.
In the baking dish, spread a couple of tablespoons of béchamel with the back of a spoon on the bottom, add half of the pasta, make a layer of Parmesan, add half of the ragù and half of the béchamel, finish with the remaining pasta, ragù, béchamel and a sprinkle of Parmesan.
Bake in a preheated oven at 356°F for 30 minutes, until golden.
Let the baked pasta rest for a few minutes before serving.
