Banana and Chocolate Chip Muffins in Air Fryer

Banana and chocolate chip muffins in an air fryer are perfect fluffy treats for breakfast or a snack, enriched with the natural flavor of ripe bananas and the delicious touch of dark chocolate. The air fryer allows for quick and even cooking, maintaining a soft and light texture, with a perfectly golden surface. Ideal for using overripe bananas, these muffins are a simple and irresistible delight.

For cooking, we used our new De’Longhi Sfornatutto Chef, a convection electric oven with an air fryer function, 34-liter capacity, and 2000W, very large, ideal for large quantities of food.

Ingredients for Banana and Chocolate Chip Muffins in Air Fryer:

  • 1 banana (ripe)
  • 2.1 oz granulated sugar (or cane sugar)
  • 3.2 oz all-purpose flour
  • 1 tsp baking powder
  • 1 medium egg (at room temperature)
  • 1/4 cup vegetable oil
  • 2 tbsps chocolate chips
  • as needed chocolate chips

Steps for Preparing and Cooking Banana and Chocolate Chip Muffins in Air Fryer:

  • Peel the banana, which should be very ripe, slice it, and place the slices in a bowl. Then mash them well with a fork to form a puree.

  • In another bowl, place the room temperature egg and sugar (you can use granulated or cane sugar) and whisk them well together, then add the vegetable oil and incorporate it into the other ingredients.

    Add the banana puree and continue mixing well, then add the sifted flour with baking powder.

    Stir well until the mixture is smooth and homogeneous. If you find the mixture too thick, you can add a small cup of room temperature milk.

    Also add the chocolate chips and fold them into the mixture.

  • Pour the mixture into 9 muffin molds. We used silicone molds, but if you use aluminum ones, grease and flour them. Due to their larger size, you may get fewer muffins. Decorate the muffins with additional chocolate chips.

    Cook in the air fryer at 320°F (160°C) for 10 minutes. If making larger ones, cook for 13 to 15 minutes. Always perform a toothpick test.
