Steps for preparing and cooking cauliflower pizza:
Wash the cauliflower well, dry it thoroughly, cut it into pieces, and put it in the blender to blend until you obtain a flour-like consistency.
Place the chopped cauliflower in a cotton cloth and squeeze it well to release all the water, then put it in a large bowl. Add the egg, salt, grated Grana or Parmesan cheese, and finally the flour. Mix the mixture well with a spoon until smooth and homogeneous.
Line a baking tray with parchment paper with a 10-inch diameter, pour the mixture, and press it well with your hands into a circular shape. Bake in a preheated oven at 392°F for about 20 minutes or until it starts to brown.
In a bowl, place the tomato sauce, olive oil, and salt, stir well, and spread it on the base.
Take the mozzarella, dry it well, and cut it into cubes, or you can put it in a potato ricer as we did.
Add a sprinkle of oregano and bake again for another 10 minutes, until the mozzarella is well melted and has a golden color.Serve the pizza immediately, sliced.
