Ingredients for Chicken Strips with Potatoes in Pressure Cooker:

  • 1.76 lbs chicken slices
  • 3 tbsps extra virgin olive oil
  • 1 yellow onion
  • 3 large potatoes
  • 0.75 cup vegetable broth
  • 0.63 cup tomato puree
  • 3.4 oz dry white wine
  • 1 tbsp tomato paste
  • to taste fine salt
  • to taste black pepper
  • to taste ground cumin (optional)

Steps for Preparing and Cooking Chicken Strips with Potatoes in Pressure Cooker:

  • Take the chicken breast slices, cut them into strips, and then put them on a flat plate, sprinkle some flour over them and coat well, remove the excess flour and put them on a plate.

    Alternatively, you can use a whole chicken breast, then cut it into slices and strips; this way, the cost of the meat will be lower than buying the slices.

    Peel the onion, cut it in half, and slice it very thinly.

    In the pressure cooker, put the extra virgin olive oil and the previously prepared onion, turn on the gas and cook for a few minutes, then add the chicken strips and brown them well, add the dry white wine.

  • When the wine has evaporated, add the tomato puree, the vegetable broth, salt, and sprinkle with black pepper and cumin if desired.

    Close the pot with the lid, check that the valve is closed, and bring it to pressure over medium heat, then lower the heat to the minimum and cook for 5 minutes.

    In the meantime, peel the potatoes and cut them into not too large pieces.

    After the time has passed, turn off the gas, release the steam by turning the valve, then remove the lid, stir the chicken strips well and add the potatoes, adjust the salt, close the lid, bring the pot back to pressure, and cook for 10 minutes.

  • After the time has passed, turn off the gas, let the pot vent, remove the lid, stir well, and serve on individual plates.

    COOKING WITH MULTICOOKER:

    The ingredients and cooking times are the same, first proceed with the browning/sauté program or pan-frying, then when you have added all the ingredients, put the lid on, close the valve, and proceed with the pressure cooking program.
