- 8 chicken thighs, with skin, raw (or drumsticks)
- 5 yellow onions
- 4 tablespoons extra virgin olive oil
- 1 clove fresh garlic
- 3 leaves sage
- 1 sprig rosemary
- 1.7 oz dry white wine
- 2 tablespoons tomato passata

Steps for Preparing and Cooking Chicken with Onions in a Pan:
Peel the onions, cut them in half, and slice them not too thinly.
Alternatively, you can use Tropea red onions if you prefer a milder flavor.
Wash the chicken well, dry it, and remove any excess fat.
For this recipe, we used thighs, but you can also use drumsticks or a whole chicken cut into pieces.
In a large pan, place the extra virgin olive oil, garlic clove, sage, and rosemary; brown well, then add the chicken (with the skin side touching the pan) and brown well on all sides.
Add the tomato concentrate and deglaze with white wine. Once it has evaporated, add the previously sliced onions, salt, and pepper.
Cover the pan with a lid and cook on medium-low heat for about 50 minutes, adding hot vegetable broth if necessary.
Serve the chicken with onions and a bit of the sauce that has formed; a bread dip is almost obligatory.
