Steps for preparing and baking Christmas cookies with cinnamon shortcrust pastry:

  • First, prepare the cinnamon shortcrust pastry by following THIS recipe. You can make the shortcrust pastry the day before and then store it in the refrigerator; the only caution is to leave it out of the fridge 10 minutes before starting to work it, so it becomes softer and easier to handle.

  • Place the dough on a lightly floured rolling board and roll out a sheet thin to 1/8 inch. Don’t make it too thick because it tends to rise a bit during baking due to the presence of baking powder.

    Cut out various shapes with Christmas cookie cutters or your preferred shape, place the cookies on the baking sheet, knead the scraps, and make more cookies until all the dough is used up. We got 60 cookies.

  • Bake the cookies at 350°F for just under 10 minutes. When they start to turn golden, remove them from the oven and let them cool.

    In a bowl, place powdered sugar and ground cinnamon, mix well, and then sprinkle it over the cookies.

    You can store the Christmas cookies for several days in a tin box, but given their deliciousness, they will be gone much sooner.
