Cinnamon Shortcrust Pastry, Basic Recipe with Brown Sugar.

Cinnamon shortcrust pastry, perfect for making many Christmas cookies, a fragrant and slightly rustic dough due to the presence of raw brown sugar.

Cinnamon shortcrust pastry can be stored for 2/3 days in the fridge before baking, and once baked, store your cookies or other preparations in a tin box, this way they will not become soft and absorb moisture from the environment.

Ingredients for Cinnamon Shortcrust Pastry:

  • cup brown sugar
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • cup butter (cold from the refrigerator)
  • 1 large egg
  • 2 tsps ground cinnamon
  • 1 pinch fine salt

Steps for Preparing Cinnamon Shortcrust Pastry:

  • Cut the butter into small pieces, we recently saw a video where the butter was left in one piece, passed through the flour, and then grated with the large-hole grater. We haven’t tried this method yet, but we liked it.

    In a small bowl, place the large egg with a pinch of salt and beat it well with a fork.

  • In a bowl, put the sifted flour, baking powder, brown sugar, and ground cinnamon (the amount depends on your taste preference for a more dominant flavor), stir well with a spoon, and then add the cold butter cut into cubes or grated. Start working the ingredients with your hands so they begin to blend.

  • Finally, add the beaten egg, quickly work the dough, and when you obtain a fairly homogeneous mixture, transfer it to a lightly floured pastry board, form a homogeneous loaf, cover it with a sheet of plastic wrap, and put it in the fridge for at least 1 hour. You can easily prepare the dough the night before for the next day. In this case, when you take the shortcrust pastry out of the fridge, leave it for 10 minutes at room temperature so it softens a bit and is easier to work with.

    Now your shortcrust pastry is ready to make lots of cookies and Christmas recipes. For cookies, the baking time will be 8/10 minutes at 356°F.

Notes

With brown sugar, the dough is more rustic compared to classic shortcrust pastry. If you want a more delicate dough, you can blend the brown sugar.
