Damiano Carrara’s apple cake, very soft and ideal for people intolerant or allergic to gluten.
The cake mixture is made with very little butter and ricotta, which gives a nice softness to your dessert, and then lots of apples both in the batter and on top of the cake as decoration.

Ingredients for Damiano Carrara’s Apple Cake:
- 1 1/4 cups rice flour
- 1/2 cup cornstarch
- 1 teaspoon baking powder (heaping)
- 2 large whole eggs (at room temperature)
- 3/4 cup granulated sugar
- 7 oz fresh ricotta
- 3 1/2 tbsp melted butter
- 1/4 cup whole milk
- 3 yellow apples
- 1 pod vanilla
- 1 organic lemon

Steps for Preparing and Baking the Gluten-Free Apple Cake by D. Carrara:
In the stand mixer, place the eggs and granulated sugar, add the grated zest of the organic lemon and the vanilla pod, beat well until the mixture is frothy and almost white.
In a bowl, put the ricotta, whole milk, and melted butter (it should be at room temperature), mix the ingredients well with a hand whisk.
In the stand mixer, add the rice flour and cornstarch, sifted baking powder, and when the ingredients begin to blend into the mixture, add the ricotta, butter, and milk mixture.
Beat the mixture until it is smooth and homogeneous.
If you don’t have a stand mixer, you can easily make the batter with an electric hand mixer.
Peel the apples, cut them in half, remove the core, and slice them, dice the scraps and add them to the batter, mix well.
Butter and flour a 24 cm (9.5 inches) cake pan in diameter, pour the batter, level it with the back of a spoon, and then place the apple slices spirally along the entire circumference, then dice the remaining apple slices and place them in the center of the cake.
Sprinkle with granulated sugar and bake at 350°F for 40/45 minutes.
Once cooked, remove it from the oven, let it cool, and place it on a serving dish, dust it with powdered sugar.
Notes
For a classic version, use 200 grams of all-purpose flour, increase the baking powder to 2 teaspoons.
