Steps for Preparing and Cooking Durum Wheat Rolls:
In a bowl, place the lukewarm water, add the dry yeast and granulated sugar, stir well to dissolve the ingredients completely.
In a large bowl, place the remilled durum wheat flour and all-purpose flour, mix well, then gradually add the water with the dissolved yeast, stirring with a spatula. When it starts to combine, add the extra virgin olive oil and salt.
When the mixture starts to combine, make reinforcement folds: just bring the mixture towards the center, then turn the dough and make more folds. Cover the bowl for 15 minutes, then make more folds. Finally, let it rise until doubled (2/3 hours depending on the season and warmth in the house; alternatively, you can put the bowl in the oven with just the light on).
Once the dough has risen, transfer it to a work surface, make another round of reinforcement folds, then divide it into 4 parts. Flatten one part with your hands, bring the outer part inward, form a ball, and turn it over. Repeat the same procedure with the other pieces of dough.
Line the air fryer grid with perforated parchment paper, place 2 rolls at a time (if you have a larger fryer, all 4), then make either horizontal parallel cuts or use scissors to make cuts on the surface, and cook at 347°F for 15 minutes.
Once cooked, let them cool on a wire rack to allow air circulation on the bottom as well.
