Fried and Baked Chatters

The fried and baked chatters, crunchy and very fragrant, perfect to make Carnival even more delicious and joyful.

For this recipe, we used our family recipe for lies or chatters that never disappoint, made without butter or oil.

Fried chatters remain crispy as if freshly made for 3/4 days if stored in a cool, dry place in a container with a lid.

Ingredients for Fried and Baked Chatters:

  • 3.5 oz granulated sugar
  • 4 cups all-purpose flour
  • 1 packet baking powder
  • 2 large eggs
  • 1 organic lemon or orange (grated zest)
  • as needed dry white wine
  • as needed oil for frying
  • as needed powdered sugar (for final decoration)

Steps for Preparing and Cooking Fried and Baked Chatters:

  • In a large bowl, place the sifted flour with baking powder, granulated sugar, and grated zest of lemon or orange. Start stirring the mixture with a spoon.

    Gradually add the slightly beaten eggs, and when they are incorporated into the flour, slowly add the white wine and work the mixture until it becomes firm (for this reason, we recommend adding the wine gradually).

    Transfer the mixture onto a floured pastry board and knead it well until it is smooth and homogeneous. Cover it with plastic wrap and let it rest for 10 minutes at room temperature.

  • After the resting time, take a portion of dough and roll it out thinly with a rolling pin (as thin as a veil) or with a pasta machine. Use a wheel to cut the dough into rectangles or as desired.

    Repeat the same process with all the available dough.

    In a deep pot, heat the oil, and when it is hot (test with a toothpick: there should be bubbles around the tip when it touches the oil), fry the chatters little by little on both sides; the cooking is very fast due to the thin dough.

    Transfer the chatters onto a plate with absorbent paper, then place them on a non-stick baking tray. Put them in a preheated oven at 350°F for about 5 minutes.

    We recommend not letting the chatters brown too much when frying because they will acquire their classic golden color when baked.

  • Let the chatters cool down, and before serving, dust them with powdered sugar.
