Ham pizza, a simple pizza especially appreciated by children, perfect also for birthday parties.
Ham pizza is made with all-purpose flour and durum wheat flour, which gives the pizza extra crispiness.
Alternatively, you can also make ham pizza with whole wheat flour, for a rustic taste.

Ingredients for Ham Pizza:
- 3 1/4 cups all-purpose flour
- 1 1/4 cups remilled durum wheat flour
- 1 1/2 cups lukewarm water (approximately)
- 1 tsp dry brewer's yeast
- 2 tsp fine salt
- 2 tbsps extra virgin olive oil
- 2 mozzarella cheeses
- 1 cup tomato purée
- 3 tbsps extra virgin olive oil
- 2 mozzarella cheeses
- to taste fine salt
- to taste dried oregano
- 6 slices cooked ham

Steps for Preparing and Cooking Ham Pizza:
In a bowl, place the two flours and stir well with a spoon, add the dry brewer’s yeast and gradually the water. Stir well with a spoon, then add the extra virgin olive oil and finally the salt.
The amount of water is not precise because many flours absorb more or less water. Add it gradually; the mixture should be homogeneous but not too soft.
When the ingredients start to mix, transfer the mixture onto a floured work surface, knead it until you get a smooth and homogeneous dough, put it back into the bowl, close it with the lid, and let it rise until it doubles (about 3 hours).
When the dough has risen, oil 2 round baking pans of 10 inches in diameter, place the dough and spread it well with your hands, and let it rest for about 30 minutes.
In a bowl, place the tomato purée and season it with oil, salt, and oregano.
Place half of the seasoned tomato purée on each dough, 1 previously cut mozzarella into small pieces and well-dried, and finally 3 slices of ham (we broke them up over the entire pizza).
Sprinkle with dried oregano; if desired, you can also add a drizzle of extra virgin olive oil.
Bake in a preheated oven at 392°F for about 20 minutes, until golden. You can cook them both together, remembering to swap the pans halfway through cooking.
Advice:
– You can make ham pizza using only all-purpose flour; just consider that the dough will require less water than with the remilled durum wheat flour.
– You can reduce the amount of brewer’s yeast to 2 grams by letting the dough rise in the refrigerator for 24 hours, preparing it the afternoon before use, then leave it for 30 minutes at room temperature and proceed as per the recipe.
