1st step at 122°F (maximum temperature)

2nd step at 82°F (maximum temperature)

Note that white chocolate and milk chocolate have different tempering temperatures:

white chocolate 113°F, 79°F, 84°F

milk chocolate 122°F, 81°F, 86°F

Do not exceed the temperatures otherwise the chocolate will not remain shiny and smooth.
