Hot milk muffins, soft muffins with a special batter where hot milk is added to the eggs, sugar, and flour and then baked.
These hot milk muffins are ideal for breakfast or children’s snacks, simple and enriched with sugar granules, but if you prefer, you can make them without or with chocolate sprinkles. Perfect as a light and delicate-tasting dessert.

Ingredients for hot milk muffins:
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 3 medium eggs (at room temperature)
- 1/2 cup whole milk
- 5 tbsp butter
- 1/2 grated orange zest (or 1/2 vanilla bean)
- 1 pinch fine salt
- 1/2 packet baking powder
- to taste sugar granules
- to taste powdered sugar

Steps for preparing and baking hot milk muffins:
Bring the milk and butter to a boil, turn off the heat and stir well.
In the stand mixer, beat the whole eggs with the sugar until you have a fluffy and almost white mixture, add the sifted flour, baking powder, a pinch of salt, and the grated orange zest or vanilla depending on your taste.
Work the mixture for just under a minute and then add the hot milk with the melted butter, when you have a smooth and homogeneous mixture, turn off the stand mixer.
Alternatively, you can safely use electric beaters instead of a stand mixer.
Fill muffin liners with the obtained mixture, filling them only 3/4 full because they will tend to rise during baking, and then place them in the oven in a muffin pan or on a baking tray. In this case, use two paper liners for each muffin to prevent them from opening during baking.
If you like, add some sugar granules as we did.
Place your hot milk muffins in a preheated oven at 350°F (180°C) for about 15/20 minutes, always checking with the toothpick test.
Let the hot milk muffins cool, sprinkle with powdered sugar if desired.
Store your muffins in an airtight container and they will remain as soft as freshly baked for several days. The only recommendation is to wait until they are cool because if placed in the container while still warm or lukewarm, they will tend to become gummy and lose their fragrance.
