Lentils and Sausage in Pressure Cooker

Cooking time is halved, and fresh sausage is used (cooking in 35 minutes compared to the usual 50/60), making for a uniquely flavored dish.

Ingredients for Lentils and Sausage in Pressure Cooker:

  • 1 1/4 cups dry lentils
  • 3 tbsps extra virgin olive oil
  • 1 2/3 cups vegetable broth
  • 1 1/2 cups tomato sauce
  • 3 tbsps frozen soffritto mix
  • 1 clove fresh garlic
  • 1 leaf bay
  • to taste fine salt
  • 1 fresh sausage (about 1.1 lbs)
  • 1 carrot
  • 1 small onion
  • 1 celery stalk
  • as needed water

Steps for Preparing and Cooking Lentils and Sausage in Pressure Cooker:

  • First, prepare the stewed lentils by reading the recipe HERE.

  • To cook the sausage, note we used fresh sausage, not precooked. In the pressure cooker, add the sausage (if they are small, you can add two) after pricking it well with a toothpick to prevent the skin from bursting during cooking. Then add enough water to cover the sausage, and we also added a peeled and sliced carrot, a small onion quartered, and a celery stalk.

    Close the cooker and bring it to pressure over medium heat, then lower the heat and cook for 35 minutes.

    After the time has elapsed, turn off the heat, let rest for a minute, then release the pressure and remove the lid.

  • Remove the sausage, place it on a cutting board with paper towels, remove the skin, and cut it into slices.

    Serve the sausage with the stewed lentils, you’ll taste the goodness!

Notes

You can also easily make this recipe in the multicooker; the cooking times and quantities don’t change. For the lentils, first use the SAUTE program and then the PRESSURE COOKING, but for the sausage, just the PRESSURE COOKING.
