- 1 banana (very ripe)
- 1 medium egg (at room temperature)
- 60 g erythritol
- 1/4 cup vegetable oil
- 3/4 cup all-purpose flour
- 1 tsp baking powder (heaping)

Steps for mini sugar-free plum cakes cooked in an air fryer:
Peel the banana (it must be very ripe), place it in a bowl and mash it well with a fork to obtain a puree.
In another bowl, put the egg and erythritol and use a hand whisk to mix the ingredients well, then add the vegetable oil and mix well.
Also add the previously mashed banana, mix the ingredients well until homogeneous, and finally add the previously sifted flour and baking powder.
Pour the mixture into the mini plum cake molds, we used silicone ones 2.75×1.57 inches, and it yielded 9 cakes (alternatively, you can use muffin molds, and you will get 4 or 5).
Transfer the molds onto the air fryer’s rack, cook at 320°F for 10 minutes.
After the time has passed, do the toothpick test.
If making muffins, cook them still at 320°F but for 15 minutes.
