Pan pizza, just like they used to make it, very soft and easy to prepare, this pizza is typical of Piedmont.
We opted for an air fryer cooking for the pan pizza, but in the recipe, you’ll also find the cooking times for traditional oven baking.
For air fryer cooking, we used our new air fryer Moulinex Easy Fry & Grill, a digital oil-free fryer with an electric grill.

Ingredients for the Pan Pizza:
- 2 cups all-purpose flour
- 1/2 tsp dry yeast
- 1 tbsp extra virgin olive oil
- 3/4 cup room temperature water
- 1/2 tsp fine salt
- 5.3 oz tomato puree
- 1 fior di latte mozzarella
- 1 tsp extra virgin olive oil
- as needed salt
- as needed dried oregano (optional)

Preparation and Cooking of the Pan Pizza:
In a bowl, put the sifted flour, add the dry yeast and stir well with a spoon, add the extra virgin olive oil and gradually the room temperature water, when the water is absorbed by the flour, add the salt and incorporate it into the mixture.
You’ll notice that the mixture is very soft, but that’s how it should be.
Work the mixture well, put it in an airtight bowl, let it rise for 30 minutes, and place it in the refrigerator for 24 hours.
The next day, leave the container with the dough at room temperature (this way the leavening reactivates) for a couple of hours.
When the dough is reactivated, spread it on two previously oiled pans with a 6.3-inch diameter, let it rise for one hour.
In a bowl, put the tomato puree, tablespoon of extra virgin olive oil, and salt, mix well.
Spread the mixture on the two pizzas, place the previously cut and dried mozzarella on top, and dried oregano if you like.
COOKING IN THE AIR FRYER:
Cook the pizzas at 356°F for 7 minutes, placing the pan on top of the air fryer’s grill rack.
If you want to cook two pizzas together, first place one pan in the basket, then a rack on top, and above the second pan, in this case, increase the cooking time by a few minutes.
COOKING IN THE OVEN:
Bake in a preheated oven at 392°F for 10/12 minutes until they are well cooked and golden.
