This dish can also be considered a complete meal as it contains potatoes, eggs, cheese, many ingredients for a tasty and inviting second course.
Unlike the traditional recipe, we haven’t added cured meats (essential for this preparation) but we liked this version a lot, served hot, the cheese that stretches is a true delight.

Ingredients for the potato casserole with air fryer:
- 1.1 lbs Potatoes
- 3.5 oz Salami
- 2 Medium eggs
- 1 Mozzarella
- 5.3 oz Smoked provola cheese
- 3 tbsps Grated Parmesan cheese
- 1 tbsp Extra virgin olive oil
- to taste Salt
- to taste Pepper
- to taste Breadcrumbs

- 1 Air Fryer Moulinex EZ5058
- 1 Knife
- 1 Baking pan
Preparation
Take the mozzarella, slice it and place it on a sheet of absorbent paper to dry well, then cut it into slices and subsequently into cubes.
Also cut the salami into small cubes after removing the skin.
Wash the potatoes well and boil them in a saucepan with plenty of salted water, for about 30/35 minutes from when the water boils, until they are soft.
If you want to speed up the cooking of the potatoes, cook them in the pressure cooker following the recipe HERE:
Drain the potatoes and mash them in a potato masher, the skin will remain inside the masher so you won’t have to peel them first.
Collect the mashed potatoes in a large bowl, let them cool slightly.
Add the eggs and Parmesan to the potatoes, mix well, finally add the mozzarella, smoked provola, and salami, blend the ingredients well.
Oil and breadcrumb an 18-centimeter diameter baking pan, pour the mixture, level it well, and sprinkle over with grated Parmesan and breadcrumbs.
Cook in the air fryer for 30 minutes at 356°F, let it rest for a few minutes, then serve.
If you wish, you can add diced cooked ham or make a layer of potatoes, a layer of cooked ham and sliced scamorza, and finish with the potatoes.
